While water bath canning is for high-acid treats, Pressure Canning is the master key to true food independence. This is the only safe method for preserving low-acid foods like vegetables, meats, beans, and hearty soups. My in-home intensive takes the intimidation out of the "rattling weight" and teaches you to operate a pressure canner with the precision of a professional.
The Technique: The Science of 240* F
In water bath canning, the temperature is capped at the boiling point of water (212* F). However, to kill the spores that cause botulism in low-acid foods, we must reach (240* F).
This is achieved by sealing a specialized vessel and allowing steam to build. This creates an environment of 10 to 15 pounds of pressure per square inch (PSI). I teach you the critical stages of this process:
Venting: Ensuring all air is purged so only pure steam remains.
Pressurization: Bringing the vessel to the exact PSI required for your altitude.
The Descent: Learning the patience of "natural cooling" to prevent liquid loss (siphoning) from your jars.
